The grapes for this wine come from a two acre block selected and maintained to allow the grapes to fully ripen and, as well, naturally raisin following cane cutting. The fruit was hand picked to assure only ripened grapes, whole cluster pressed to fermentator and chilled overnight to 38F. The wine was fermented very cold (43 F – 46 F) for nearly four months. Fermentation stopped when the alcohol level reached approximately 8.5%. Style and Description -Tropical aromatics reveal themselves on the nose, with sweet honey, pineapple and orange dominating on the palate. Well balanced acidity complements the ~ 12.5% residual sugar and leads to a long, fruity finish. Serve well chilled. Aging- While most commonly enjoyed when still young, the wine will age gracefully for 10 or more years if stored properly.
