 The Chardonnay grapes used for this wine were meticulously chosen from the winery’s best vineyards in Kerem Ben Zimra and Kibbutz Manara. In these vineyards special emphasis is placed on low yields, around 800 kg per dunam (0.25 acres), to ensure a concentrated and flavor-intense fruit. However, it also resulted in a limited label production of a mere 6,500 bottles of this wine. The wine was aged in French Oak barrels for 8 months in the Burgundy \”sur lie\” tradition. This fermentation period enhanced the wine\’s pear and pineapple flavors with aromas of jasmine, vanilla, honey and lemon blossom. This is a complex and refined Chardonnay wine with a balanced acidity that will enable it to improve while bottled in the coming years.
