This wine was produced from 100% Chardonnay grape. The grapes were grown in the Judean Hills near Jerusalem and were hand harvested by the owner personally. Production was done in the family owned, operated, and managed winery. The special method for this specific varietal gives the wine wonderfully intensive aromas with firm acidity.
Both alcoholic and malolactic fermentation were completed in new French oak barrels and cool stainless steel tanks. This combination kept the grapes' aromas and added body to the wine without creating an overly woody taste on the palate. The wine was held sur lie for twelve months in the same barrels and tanks
