Barkan’s Assemblage Series offers a whole new perspective on the potential of Israel’s wine region. Marselan, Caledoc, Carignan and Pinotage were individually fermented and barrel aged for 10 months before being selected to create Tzafit. The wine has a complex aroma of chocolate, fresh mown hay and a hint of Virginia tobacco balanced by soft round tannins and a tart finish. The wine is ready now but will only improve with age.
